Prawns with Ginger and Chillies Crispy

½ kg large prawns, cleaned, trimmed and deveined
10 dried chillies
¼ cup ginger, grated
2 tbsps. garlic, chopped
3 tbsps. cooking oil
2 tbsps. fish sauce

Cut chillies into 1/2-inch sections,toss with enough oil. Microwave at High for 1 l/2 minutes. Heat a 10 x 10-inch browning skillet in microwave oven at High for 8 minutes. Add cooking oil and garlic, saute till aromatic, remove from the skillet and set aside. Microwave the browning skillet for 2 more minutes. Add grated ginger. Stir-fry for a minute. Add prawns, fish sauce and garlic. Microwave covered at High for 3 minutes. Uncover, stir in crispy chillies and serve.
