Sweet-sour Fish Soup

½ kg. Fish or chicken
¼ cup spring onions cut into l-inch
½ cut length fresh ginger, finely shredded
4 cups water
1 tbsp. cooking oil

1/2 tbsp. ground pepper
½ tbsp. garlic
¼ cup shallots, chopped
½ tbsp. salt
½ tbsp. coriander root
½ tbsp. shrimp paste

4 tbsps. tamarind juice
1 tbsp. fish sauce
2 tbsp. palm sugar

Arrange fish on a plate, cover and microwave at High for 6 minutes. Pound together (1) and turn into a serving bowl. stir in cooking oil. Microwave at High for 1 minute or until aromatic. Add water, allow to boil in microwave for 8 minutes and add fish and ginger. Season with (2) and microwave at High for 4 minutes.
Add spring onions and serve.
