Moist Carrot Cake Recipe
Ingredients
1½ cups all-purpose flour, sifted
1 tsp. baking powder
1 tsp. baking soda
1½ cups carrot, shredded
1½ cups coconut, grated
¾ cup raisin, chopped
1 tsp. cinnamon
1½ tsps. vanilla
¾ cup cooking oil
5 eggs
1 cup castor sugar
¾ cup nuts,baked and chopped
Cream Cheese Frosting
1 package (3 oz) cream cheese, cut into 4 pieces.
2 tbsps. butter
2 tsps. lime juice
1½ cups confectioners'sugar
¼ tsp. mace
Combine (1) in a bowl of Food Processor. mix well. Add flour pulse until just mixed. Turn batter into a prepared 5 x 10-inch loaf dish. Microwave at High for 10 minutes. Cool and remove from dish, frost with cream cheese frosting.
To make the cream cheese frosting : blend all ingredients in a small mixing bowl until smooth.
