Banana Coffee Bread Recipe

½ cup plain flour
1 cup whole wheat flour
½ teaspoon salt
1 teaspoon baking soda
½ cup butter, softened
3/4 cup castor sugar
2 eggs
1 tablespoon lemon juice
1/3 cup milk
2 ripe bananas, mashed

Sift dry ingredients together. Put other ingredients into the work bowl of a food processor and process until well blended. Pulse in flour mixture. Scrape down the bowl if necessary. Blend in mashed banana after this. Spread the batter in a 4½"x 10" container. Microwave at High (600-700 Watts) for 6-6½ minutes. A few moist spots may appear on middle top of the oblong container. Cover dry parts with aluminum foil and microwave for ½ minute more. The moist spots will dry as cake cools.
