Baked Fish Recipes
1 whole fish
1 stalk lemon grass. cut into sections and crushed
2 citrus leaves, torn up (optional)
2 coriander roots
1 tbsp. garlic, chopped
1 tbsp. pepper
¼ cup butter or margarine
4-5 cabbage leaves

10 cloves garlic
15 bird'eye chillies
3 tbsps. lime juice
1 tbsp. sugar
2 tbsps. fish sauce

Clean and score fish. Stuff with lemon grass and citrus leaves. Pound coriander roots, garlic and pepper finely and mix with margarine. Rub with margarine mixture and wind around the fish with cabbage leaves and plastic wrap. Microwave 6 minutes at High, stand for 5 minutes. Unwrap and turn to a serving dish. Serve hot with sauce.
To make the sauce : pound together garlic and chillies. Stir in fish sauce, lime juice and sugar.
